Yummy Tapioca Pudding

We usually soak the tapioca and milk starting at bedtime, wake up about 4:00am to put all the ingredients in the crockpot and get it started cooking, and turn it off to eat inbetween 6:00am and 7:00am.

Instructions

Step 1
Put 1 cup of small tapioca pearls (Bob's Red Mill is a good brand; order online) in a container
Step 2
Cover with 2 cups raw milk
Step 3
Cover and leave in fridge for 2-6 hours (This is not for health benefit, but for more even cooking and very smooth pudding)
Step 4
In crockpot, combine soaked pearls/milk, 6 more cups raw milk, 4 eggs, 1/4 tsp real salt, and 1 1/3 coconut sugar.
Step 5
Whisk well, cover, and cook on low about 3 hours.
Step 6
Opt: stir 2-4 times during cooking
Step 7
When finished, the pudding should be thick and the pearls clear
Step 8
Add 4 or so tbsp. butter, 2 egg yolks (opt.), and some vanilla, maple, and/almond extract for flavor
Step 9
Opt: beat the 2 egg whites with electric beater until soft peaks form (only takes a couple minutes). Fold into tapioca and enjoy warm or cold
Step 10
Opt: add peanut butter, almond butter, shredded coconut, bananas, nuts, etc. to individual servings, if desired, for variety
