Instructions
Step 1
Dice onion, carrots and celery
Step 2
Heat avocado oil in soup pot over medium high heat. Once hot, add garlic. Cook for about one minute.
Step 3
Add onion, celery, parsley. Cook for 4 minutes, stirring frequently.
Step 4
Add broth, tomatoes with juice, carrots, barley, salt, pepper, oregano, thyme and bay leaves. Bring to a boil.
Step 5
Reduce heat and simmer for 40 minutes, covered. Stirring occasionally.
Step 6
Stir in chicken. Simmer for another five minutes. Then serve.
