Step 1
For the chocolate shells, break the milk or dark chocolate into small chunks and place them into the microwave-safe bowl. Melt in the microwave in short 10 seconds bursts, stirring constantly every 10 seconds. When melted add sunflower oil and mix until combined. Set aside to cool a bit.
Step 2
Fill the silicone doughnut shape with the chocolate and use the spoon to spread to fill the mould. Place into the fridge to settle until preparing the filling.
Step 3
For the filling crumble the sponge cake in a large bowl. In another bowl add cream cheese, double cream and icing sugar. Whisk until firm(2-3minutse). Add cream to the sponge cake crumbs and mix well until combined.
Step 4
Fill in the doughnut shape with the filling, press firmly and place into fridge until preparing the cream.
Step 5
When cream is ready, take out the doughnuts from the mould, place them on a flat surface(chocolate side down) and cut off any excess.
Step 6
For the cream, add all ingredients to a bowl and whisk until firm, using a hand mixer. Transfer to the piping bag with your favourite nozzle (I used an open star) and assemble the cream on top of the doughnut cakes.
Step 7
Decorate with raspberries and rosemary leaves and enjoy!
