Instructions

Step 1
Preheat the oven to 215℃. Lightly grease a 9-inch springform pan, and layer it with parchment paper.
Step 2
In a small bowl, whisk the cornstarch and flour. Set aside.
Step 3
In a large mixing bowl, add the cream cheese, mascarpone and sour cream. Mix until the mixture is smooth and creamy. Add the double cream and vanilla and mix well. Then sift in the flour mixture and gently fold it into the batter until combined.
Step 4
Using an electric mixer, beat the sugar and eggs until fluffy (about 4 minutes). Add the egg mixture into the cheesecake mixture and stir well. Pour the cheesecake batter into the prepared pan. Bake for about 25-30 minutes.
Step 5
After that, broil the cheesecake in the oven until the top has burned to a dark colour.
Step 6
Remove from the oven and cool. Chill in the refrigerator for at least 6-7 hours (even better overnight).
