Claudia’s Curried Pumpkin Soup
Hearty soup with pumpkin, chicken, and curry powder.

Instructions
Step 1
Sauté together in 5 quart or larger pot: 2 Tbsp. olive oil 4-6 oz., chicken cubed (I use one boneless thigh, for flavor) 1 medium onion

After assuring chicken is cooked thoroughly, Stir in: 1 can pumpkin (NOT the pie mix), 1Tbsp Better Than Bouillon seasoned chicken base , and 1 pumpkin can full of water 1 Tbsp.
Step 3
Add Dale's Steak Seasoning (may substitute Worcestershire Sauce) , 2/3 Quart of Half and Half (Reserve remainder) , 1-2 Tbsp. Curry powder. ** Only add 1 Tbsp at a time, to personal taste. Different brands and ages of Curry powder may change the potency and heat, significantly**
Step 4
Stir well.
Step 5
Heat on medium low, stirring often.
Step 6
At this point I use an immersion blender and thoroughly purée the chicken into the soup.
Step 7
It is pretty thick after.
Step 8
Thin with remaining Half and Half, until soup is consistency of sour cream.
Step 9
May add salt and pepper to taste.
Step 10
If you used Dale's it already adds salt so be careful.
