These are insanely delicious! They are best to eat at the same time you made them. They are super crispy. As longer you keep them as softer they will be.

65gdouble cream
heavy/whipping cream
65gicing sugar
1 tspvanilla extract
or a pinch of vanilla powder

Instructions
Step 1
Preheat the oven to 190C(fan)
Step 2
Place 1 filo sheet on a flat surface and brush with butter. Cover with another filo sheet and brush again.
Step 3
Cut it into strips according to the size of your tubes( I got 5 strips from 1 sheet)
Step 4
Place the tube at the bottom of 1 filo strip and roll up filo around the tube tightly.
Step 5
Brush with more butter to secure the edge.
Step 6
Repeat the process with the remaining filo pastry.
Step 7
Transfer filo-wrapped tubes onto a baking tray lined with parchment and bake for 10 minutes, or until golden.
Step 8
Meantime, in a bowl combine icing sugar, double cream, cheese cream and vanilla. Use a hand mixer to whisk all together until you get firm cream(a few minutes). Transfer the cream to the piping bag.
Step 9
When filo tubes are ready, remove them from the oven and let them cool completely.
Step 10
Fill the filo tubes with cream.
Step 11
Chop roasted pistachios and dip the filo tubes into them (on the cream side)
Step 12
Garnish with icing sugar and enjoy.
