Step 1
Boil 1# of large beets for three hours or until fork-soft. Peel beets while still hot with a rough towel

Cut the beets into 1" cubes, (be sure to wear gloves to avoid stained hands!) Allow to cool in the fridge for at least 30 minutes.

Step 3
Combine the beets, pinch of sugar, white balsamic, s+p to taste in the blender. Blend on a low/medium speed until combined. (Add water for a looser vinegarette, omit for a thicker balsamic.)

Slowly and gradually drizzle the 90/10 oil as the blender runs on a normal speed. Continue until the oil is gone and the mix is emulsified.
