Ingredients

2.25 poundSweet potatoes
peeled and chopped
1 cuphalf and half
¾ cupbrown sugar
packed
1 teaspoonsalt
1 teaspoonvanilla extract
2eggs

For the topping
Instructions
Step 1
Preheat oven to 375°F
Step 2
Place potatoes in a dutch oven and cover with water. Bring to a boil. Reduce heat and simmer 20 minutes or until tender. Drain and cool slightly
Step 3
Place potatoes in a large bowl. Add half and half, 3/4 cup sugar, salt and vanilla. Beat at medium speed until smooth. Add eggs and beat well. (Mixture will be thin) Pour into a greased 9x13 pan.
Step 4
Sprinkle mini marshmallows over top of the potato mixture
For topping
Step 5
Combine flour, 1/4 cup sugar, and salad Ina. medium bowl. Cut in butter with a pastry blender or two knives until mixture resembles course meal.
Step 6
Stir in pecans and spread over top of potatoes and marshmallows
Step 7
Bake at 375 for 30minutes or until golden brown.
