Instructions

Step 1
Preheat the oven to 350ºF.

Prepare the graham cracker crust

Step 2
Blend the graham crackers to a fine crumb in a food processor
Step 3
Transfer graham crackers crumbs to to stand mixer and mix in the brown sugar and cinnamon (if using)
Step 4
Add in melted butter and mix thoroughly pausing only to scrape the sides of the bowl.
Step 5
Transfer the crumb mixture to a 9-inch springform pan or cupcake pan. Press the mixture into the pan with a cup until tightly packed.
Step 6
Bake graham cracker crust for 10 minutes or 6 minutes if making cupcakes

Prepare the cream cheese filling

Step 7
Whisk the eggs in a separate bowl and then, using a stand mixer, combine all of the filling ingredients one at a time and in order.
Step 8
Transfer cream cheese filling to graham cracker crust and bake in preheated oven for 50 minutes or 18 to 20 minutes for cupcakes. Allow the cake to cool on top of the oven for an hour and then refrigerate overnight.

Prepare the sour cream topping

Step 9
Combine all ingredients and top cheesecake after it has cooled for at least one hour
