I used Marsala, and you could also use white wine

grated, or high quality Swiss, I use Jarlsberg Swiss for this
¼ cupgrated parmesan cheese
4 Tbparsley
minced
½ tsptarragon
2 Tbwhipping cream
3 TbSwiss cheese
grated, or Gruyere
