Step 1
Add washed sliced leek to a pan with a little olive oil sauté a minute then add butter and sugar and cook another minute

Add garlic and cook one more minute then set mixture aside to cool

Step 3
Slice puff pastry into 24 small squares then grease a mini muffin tray the top also and sit each square into a hole

Step 4
Add a teaspoon of the leek mixture then cut the Brie into 24 pieces and add a chunk in each one . Decorate with the remaining leek add pepper if you like then bake at 200 c / 400 f fan setting for 15 minutes or until golden
