Step 1
1. Heat a heavy pot over medium high heat. Add leek or desired aromatics and one tablespoon of oil. Cook, uncovered and stirring often, until leek begins to soften, about 3 minutes
Step 2
2. Add muscles, stock, time and bay leaf or desired herbs. Cover and cook until mussels have opened completely, three to five minutes
Step 3
3. Discard any mussels that have not opened. Tossed with tarragon or desired garnish and remaining one tablespoon of oil
Step 4
4. Serve with bread if desired
