Instructions
Step 1
Combine beef, eggs, capers, Parmesan, bread crumbs, salt, pepper to taste and marjoram. Mix very thoroughly.
Step 2
With hands dipped into flour, shape the meat mixture into l½-inch balls. Flatten balls out a little for quicker cooking.
Step 3
Coat meatballs with flour, shaking off excess flour.
Step 4
Heat butter and oil in a large frying pan. Cook the meatballs over medium heat for 5 to 7 minutes, turning once; cooking time depends on the thickness and desired doneness of the meat.
Step 5
A few minutes before meatballs are done, sprinkle them with the wine and reduce heat, letting the meat absorb the wine. Serve hot, with the pan juices poured over the meat, or cold.
