Step 1
Peel and chop the potato into large chunks. Chop up the leeks into large rings.
Step 2
Put the potatoes and leeks in a large pot and sauté until the leeks are tender. Add the garlic and artichokes until garlic is fragrant.
Step 3
Add the chicken broth. It should barely cover the rest of the ingredients. Bring to a boil. Once boiling, reduce heat and simmer for 20 minutes.
Step 4
Pull the pot off of the heat and add the mascarpone. Using a hand blender, blend everything to the consistency you like and serve. We like to serve with some kind of cheese bread.
