Poke holes on your pie crust, then pre-bake it on your oven before you start making the chocolate filling. In a saucepan over medium heat, combine the sugar, cornstarch, salt, and shaved chocolate, then gradually add the milk while consistently stirring for about 15 to 20 minutes or until the chocolate is melted and the mixture becomes thick and bubbly. Once bubbling, set a timer for 1 minute and stir as the chocolate mixture simmers, then remove it from the heat. To temper the egg yolks, simply scoop about 4 to 5 tablespoons of the chocolate mixture and add to 3 egg yolks, then stir it constantly. Once the yolks are tempered, stir in the egg yolk mixture into the saucepan with the hot chocolate filling. Put the saucepan back into the stove and bring it to a simmer, then cook it for 1 more minute while stirring consistently. Remove it from the stove, then stir in the vanilla and almond extract, and then pour the mixture in the pre-baked pie shell.
