Averrhoa bilimbi grows in almost every goan backyard. Juicy and extremely sour.... I was determined to try my version of Bimbli wine..... Tangy and sweet ver 1.0 was a very satisfying and heady experiment just in time for International Womens Day Cheers🍷

Instructions
Step 1
1) Clean wash and thoroughly dry the bimbli fruit
2) Cut the fruit into midsize pieces
3) crush the sugarcane jaggery 3/4kg per kg of fruit
4) Evenly massage the jaggery and cinnamon with the fruit
4) Place the fruit in mason jars with the top covered in muslin cloth and store in a cool dark place
5) For next 21 days stir the jar of fruit
6) As the fruit sweats it will become pulpy
7) Sqeeze out the bombils after day 21 and decant into bottles with cork lids
8) Consume after another week or two
