For the Nacho cheese sauce

Step 1
Preheat oven to 400F/200C. Line a baking sheet with parchment paper. Arrange the potatoes on the baking sheet and pierce with a fork. Roast for 50-75 minutes, until cooked all the way through. Remove from oven and set aside.
Step 2
While the potatoes are roasting, add a couple of inches of water to a medium-sized pot and place a steaming basket in it. Add the diced potato and carrot, cover and cook for 15-20 minutes until soft. Remove from heat and place in a blender. Add the turmeric, garlic powder, onion powder, cayenne, lemon juice and water to the blender and blend until very smooth.
Step 3
To prepare the broccoli, add a couple of inches of water to a medium-sized pot and place a steaming basket in it. Add the broccoli florets, cover and cook for 6-8 minutes until soft. Remove from heat.
Step 4
To serve, cut an opening lengthwise through the potatoes and fill the cavity with broccoli florets. Drizzle a few tablespoons of nacho cheese sauce onto each potato and serve immediately. Enjoy! Makes 2-4 servings
