Instructions
Step 1
1. Preheat oven with grill on position rack 10cm from the grill. Spray an oven tray with cooking spray.
Step 2
2. In a small bowl stir together breadcrumbs and milk. In a large bowl stir together cheese, eggs, prosciutto, onion, parsley, and 1/2 teaspoon of the salt and pepper until combined. Add breadcrumb-milk mixture and turkey; combine gently using hands. Shape mixture into 24 meatballs. Place meatballs on prepared tray spaced 4cm apart on half of the baking tray.
Step 3
3. Add 1 tablespoon of the oil, 1/4 teaspoon of the salt, and remaining 1/4 teaspoon pepper in a large bowl with the green beans and mix together. Spread an even layer on the other half of baking sheet with meatballs.
Step 4
4. Prepare a separate baking tray. Add tomatoes, 1 tablespoon of the oil, and remaining 1/4 teaspoon salt in a medium bowl and mix through. Spread tomatoes in an even layer on baking tray.
Step 5
5. Place baking trays side-by-side in preheated oven swap over if you can’t place side by side. Grill until tomatoes are browned and have burst, about 5 minutes. Remove tomatoes from oven. Continue cooking meatballs and green beans until meatballs are browned and cooked through, about 7 minutes. Remove from oven.
Step 6
6. Transfer tomatoes (along with any tomato juices on baking sheet) to a bowl; add remaining 1 tablespoon oil, and stir gently to combine. To serve, arrange 1 1/2 cups green beans and 4 meatballs on each of 6 plates. Spoon tomatoes evenly over green beans; drizzle tomato juices in bowl over meatballs. Sprinkle evenly with shaved cheese; garnish with parsley.
