Instructions

Step 1
Preheat oven to 250°
Step 2
Line a rimmed baking sheet with parchment paper
Step 3
Whisk together tapioca starch and 1.75 cups sugar in a small bowl

Beat together egg whites, lemon juice and salt with an electric mixer until frothy, 1-2 minutes. Increase speed to medium high and gradually add sugar mixture, beating until stiff, glossy peaks form, about 10 minutes
Step 5
Spread meringue on two prepared baking sheet in an even later to form a 13x10 in rectangle
Step 6
Bake until set and firm, about 2.5 hours
Step 7
Turn oven off and let stand in oven to completely cool, about 3 hours
Step 8
Combine strawberries, basil and vinegar and a bowl. Let stand for 30 minutes
Step 9
Just before serving, beat together cream and remaining one tablespoon sugar with an electric mixer on medium high until soft peaks form. Spread whipped cream over meringue and top with strawberry mixture. Serve immediately
