Rich Tomato Cassoulet

This rich warming dish is traditionally served with Pork Sausages, Duck Confit and Bacon but can be served without for a Vegan Friendly option. If you fancy a spicy kick Spicy Nduja is an amazing addition I enjoy, just don't go too crazy, to avoid greasiness.

Instructions

Step 1
Fry off the bacon, celery, and onions in a pan on a low heat for up to 10 minutes or until the onion is starting to turn translucent, and the lardons golden
Step 2
Add the Garlic Thyme and Paprika and fry for a further 3-4 minutes
Step 3
Pour in the wine and reduce by half maintaining a medium heat
Step 4
Pour in the Chopped tomatoes, Veg Stock, Both types of beans as well as Sugar and Vinegar
Step 5
Bring to the boil while continuinuously stiring the pan to combine ingredients. Stiring in a figure or eight helps ensure food doesn't catch in the pan.
Step 6
Cook off your chosen type of protein, I like to use Heck Pork Sausages as I find they have a very hearty flavour, another great choice is Rindless Pork Belly cut into 3-5 cm peices
Step 7
Either add to a slow cooker and cook on low for 6 hours approx. Or transfer into a casserole dish and bake in the oven on 150 Celsius for 3-4 hours approx. stiring occasionally to ensure optimal cooking.
