Instructions
Step 1
Bloom the yeast in some warm water (35-40c) in the stand mixer bowl.
Step 2
Make the poolish.
Add the yeast, remaining water and equal parts of flour (450g) to the stand mixer.
Step 3
Mix and place into cambro. Let rise for an hour, then in the fridge overnight.
Step 4
Dump poolish into stand mixer and run on low for a bit.
Step 5
Add sugar and remaining flour. Mix until incorporated.
Step 6
Drizzle in oil while mixing.
Step 7
Divide into four even balls.
Step 8
Store in oiled Tupperware container in fridge for at least a day
Step 9
Preheat oven for 45+ minutes before being ready to bake.
Max temp with the steel inside.
Step 10
To make pizza, spread on peel, either with cornmeal or parchment paper.
Step 11
Add pizza sauce and no other toppings
Step 12
Parbake for 2-4 minutes
Step 13
Add remaining toppings as fast as you can
Step 14
Bake for another 4-6 minutes.
