Instructions

Step 1
Bloom the yeast in some warm water (35-40c) with the sugar
Step 2
Add remaining ingredients to bowl of stand mixer
Step 3
Add bloomed yeast
Step 4
Mix on low and turn up speed as you go
Step 5
Split dough into two right even balls
Step 6
Store in oiled Tupperware container in fridge for at least a day
Step 7
To make pizza, spread on peel, either with cornmeal or parchment paper.
Step 8
Add toppings
Step 9
Throw in very hot oven with preheated steel.
