Instructions

Step 1
Mix caster sugar and cinnamon together. Then lightly coat each ramekin.
Step 2
Beat 6 egg yolks and caster sugar together. Then add dry ingredients.

Combine mixture together.
Step 4
Add the milk till smooth.
Step 5
Put the mixture in a pan on low heat till thick.
Step 6
Transfer to a bowl and allow to cool. Then whisk until smooth and glossy.
Step 7
Whisk egg whites and lemon juice until stiff peaks form.
Step 8
Whisk in first spoon off egg whites. Then gently fold the rest into the mixture a spoon at a time.
Step 9
Fill the ramekin and smooth of the top. Create a rim around the edge of the ramekin.
Step 10
Put in the oven for 13 mins at 180c.

Chocolate Sauce

Step 11
Melt the double cream, chocolate and honey in a pan till smooth.
