Grandma's Molasses Cake

This cake was a classic at every birthday and special occasion. It's incredibly moist and so flavorful. If the molasses flavor is too strong using all dark molasses, you can adjust by using part light and part dark. Make sure to let the cake cool completely before glazing!

Instructions

For the Cake:

Step 1
-Set you oven to 350*F and line a 9 inch round cake pan with parchment and butter or cooking spray. -In a medium bowl, sift together the flour, salt, baking soda and spices then set aside. -Whisk together the shortening and boiling water until the shortening is completely melted, then whisk in the molasses. -Beat in the egg for about one minute then add the orange zest and mix well. -Add the dry ingredients to the molasses mixture and stir just to combine. Do not over mix. -Evenly spread the cake batter into the prepared baking dish then bake at 350* for 25-30 minutes, or just until the middle is set. -Cool for 10 minutes, then invert and cool completely on a wire rack or serving dish of your choice.

For the Glaze:

Step 2
-Sift the powdered sugar and cocoa powder into a medium bowl then add the salt and orange juice. Start with just a small amount and adjust the consistency with more orange juice or water as needed. -Once the cake is cooled completely, glaze evenly, then dust the top with more powdered sugar. -I like to glaze the cake a few hours before serving so it can begin to set well...although its hard to resist eating it warm...
