Simple sandwich cookie

Pretty cookies that use an impression rolling pin to make a design.

Instructions

Step 1
To make the dough just put all of the ingredients in the bowl of a stand mixer, mix at medium for about 3 minutes or until everything becomes cookie dough. Dough will be dry, may need a bit of hand kneading to come together.
Step 2
Divide in two and roll each portion in between 2 parchment pieces. Put in the fridge for about 30/40 minutes
Step 3
Remove dough from refrigerator and roll to approximately 1/4 in thick with the impression rolling pin. Press firmly to imprint design. Cut even number of cookies to desired shape
Step 4
bake at 350*F on silicone mat or parchment baking time depends on the cookie size, around 14-16 minutes Cool on wire rack
Step 5
Spread a thin layer of jam between cooled cookies and sandwich.
