Lamb chops

Lamb chops 2.5 pounds lamb chops 1 tomato cut in to chunks 1 seeded and deveined jalapeño sliced 1 thinly slice onion 1 sliced bell pepper 2 peeled and chopped potatoes 1 tsp salt 1/2 tsp pepper 1 tsp garlic powder 1 tsp oregano 2 tbs olive oil For the sauce: 1 6oz can tomato paste 2 cups cup warm water 1/4tsp pepper 1/4 teaspoon garlic powder 1/4 teaspoon salt 1/4 teaspoon oregano Place cleaned lamb chops in to a 13 x 9 baking dish and add seasoning and olive oil onto lamb chops . Coat well. Sprinkle chopped veggies around the lamb in the pan and a drizzle of olive oil. Place in preheated 375° oven. While the meat is in the oven in a mixing bowl add Tomato paste warm water and whisk to dissolve the tomato paste. Add in the 1/2 teaspoon of garlic powder 1/2 teaspoon of salt 1/2 teaspoon of oregano and 1/4 teaspoon of black pepper whisk to combine. After 40 minutes pour the sauce over the lamb and the veggies and cover with aluminum foil. Place back in the oven at 400° for an additional 30 to 40 minutes until meat is tender. . . . .
