Step 1
Preheat oven to 200C.

Step 2
Lightly pan fry bacon until crisp, and cook onions in bacon fat until transparent, about 5 minutes. Add chopped spinach and stir until welted.
Step 3
Place rice, stock, butter, pumpkin, garlic, chilli powder, Dijon, onion and bacon in and ovenproof dish and stir gently to combine.
Step 4
Cover with foil or lid and bake for 30 mins or until rice is soft.
Step 5
Stir in Parmesan, salt and pepper and parsley, then serve.
