Instructions

Step 1
Mix 2 tbsp sugar with 1 cup warm water Add yeast and leave 5-10 minutes

Mix remaining 1tbsp sugar with salt and flour.

Combine 1 cup starter with egg yolk (reserve white for egg wash)

Combine yeast and sourdough started with dry ingredients

Knead to form soft dough
Step 6
Grease inside of bowl and add dough & cover with greased waxed paper. Let rise for 1 hour.
Step 7
Punch down and divide into 12 - 16 equal portions

Stretch out each adding grated cheddar and pinching closed. Reserved about 1/3 cup cheese for topping after baking.
Step 9
Place on cookie sheets to rise 45 minutes.

Preheat oven to 350 F

Brush with egg white and sprinkle with remaining cheese

Pop back in the oven for about 1 minute to melt the cheese.
