Instructions

Step 1
Preheat oven to 200C(fan)
Step 2
Unroll a sheet of puff pastry
Step 3
Spread the cranberry sauce all over the puff pastry, then top with crumbled Stilton cheese and sprinkle with pistachios .
Step 4
Roll tightly into the log starting from longer side.
Step 5
Transfer it to the baking paper.
Step 6
Cut the log in half then twist tightly 6-7 times.
Step 7
Roll it into a spiral shape and brush with egg wash ( egg yolk combined with milk)
Step 8
Transfer the swirl to the baking tray together with parchment and bake for 15 minutes or until golden.
Step 9
Sprinkle with the thyme leaves and enjoy!
