I've used the recipes from this old cookbook for more than 20 years. It was pub. 1996 & has some unique recipes so I'll share this interesting but delish version of a time honoured classic.

Instructions
Step 1
Slice onions very finely into rings. Melt the butter in a pan, add the onion rings and fry over a medium heat until browned.
Step 2
Add the stock and seasoning, simmer for 30 minutes.
Step 3
Toast the bread on both sides. Combine the cheeses, and divide between the bread slices; grill until golden brown. Place the bread in the bottom of individual soup dishes & spoon the soup over top.
Step 4
Serve at once.
