Instructions
Step 1
In a pan over medium heat, dissolve the matcha and sugar in your choice of milk. I used coconut milk.
Step 2
After the sugar and matcha have become homogenous with the coconut milk, slowly whisk in the sweet rice flour, little by little.
Step 3
After you have added all of the flour, keep mixing the milk mochi until it’s smooth and no longer lumpy. This will take 7-8 minutes. By now, the milk mochi should have thickened quite a bit.
Step 4
When the mochi becomes smooth, remove it from heat and set aside to cool down for 10-15 mins. The longer you let it cool, the chewier it becomes! If you want it to be more silky, eat it while it is warm!
Step 5
For your topping, crush your favorite cookie or biscuit into crumbs. I used Biscoff cookies.
Step 6
Pour the milk mochi over the crushed cookies.
