Fanale's Banana and Blueberry Muffins

Chocolate, white chocolate or butterscotch morsels can be used in place of the blueberries. I never use 3 bananas. Too many can make the muffins heavy and soggy. I usual use 1-2.

Instructions

Step 1
Preheat the oven to 200°C/180°C Fan/gas mark 6/400°F and line a 12-bun muffin tin with muffin papers.

Peel and mash the bananas and set aside for a moment.
Step 3
Pour the oil into a jug and beat in the eggs.
Step 4
Put the flour, sugar, baking soda and baking powder into a large bowl and mix in the beaten-egg-and-oil mixture, followed by the mashed bananas.
Step 5
Fold in blueberries, then place equal quantities in the prepared muffin tin and bake in the oven for 20 minutes.
