Ingredients

2 lbsminced pork
ground, and minced beef
2white onions
food processed to very small
4carrots
4 stalkscelery
2 tablespoonstomato paste
4cans plum tomatoes with juices
4cans plum tomato water
cans
2 sprigsrosemary
destemmed and chopped to fine
4 ozsmokey bacon
chopped small
vegetable oil
to fry rosemary with smoked bacon
Instructions
Step 1
Take two sprigs of rosemary off their stems and chop fine.
Chop up 4 oz. smoked bacon.
Add about a tablespoon to a large Dutch oven that's set over medium heat.
Throw in the rosemary, once it's to temperature, and add in the chopped smoked bacon.
Step 2
Add in 2.2 lbs. minced (ground) beef and 2.2 lbs. minced pork and chop to very small with a wooden spoon. Let this cook until all the water cooks out. After that, let the meat cook another few minutes, stirring often. This makes the meat much more flavorful. Don't let it burn, though.
Step 3
Using a food processor, chop, to fine texture, 2 white onions, 4 large carrots, and 4 ribs of celery. Add this to the Dutch oven and give it a good stir. Let this simmer for about 20 minutes, stirring every minute.
Step 4
Stir in 4 tablespoons tomato paste and 4 cans plum tomatoes with all the juices. Add in 4 cans (from each plum tomato can) of water and give this a stir.
Step 5
Let this gently simmer for 1 1/2 to 2 hours, stirring occasionally. The plum tomatoes will naturally break apart during this time.
Step 6
This recipe makes a lot. You can freeze leftovers in a freezer bag. Prepare this flat in the bags so you can stack in the freezer. Storing it flat and thin will also make it so much faster to thaw and/or heat up when you need it. Tip: You can also use a similar amount of lentils in place of half of the meat and it'll be hard to tell the difference.
