2 Tbspolive oil

5chicken sausage links
fully cooked Italian, sliced

0.5yellow onion
diced

5cloves garlic
minced

1 cuporzo
uncooked

⅓ cuproasted red peppers
chopped

1 tsppaprika

½ tspitalian seasoning

¼ tspsalt

¼ tspblack pepper

red pepper flakes
to taste

2 cupslow sodium chicken broth
plus more as needed

1 cupbaby spinach
chopped

⅓ cuptomatoes
crushed, can substitute marinara

1 cupheavy cream

0.5juice of lemon

parmesan
to taste
Instructions
Step 1
Heat a large skillet over medium heat with olive oil. Add chicken sausage and allow to cook in one layer, undisturbed, for 5 minutes. Stir and cook another 2 minutes, then remove from the pan and set aside.
Step 2
Add onion, garlic, and orzo to pan. Cook for 1 minute. Add red peppers, seasonings, and broth. Bring to a boil, then reduce to a simmer for 10 minutes, stirring frequently to avoid sticking, until the orzo is al dente. If your orzo is absorbing the liquid quickly, add another splash of broth.
Step 3
Stir in cream, tomatoes, and spinach. Simmer for another 5-10 minutes, until more liquid is absorbed. Add lemon juice and serve with parmesan.
