Loaded Beef Chilli Cheese Fries & Zesty Slaw

Smoky chilli cheese fries are a Tex-Mex classic. You'll smother chips with rich beef chilli and melty cheese, then add fresh zing with a zesty lime slaw. Tex-Mexcellent!

Instructions
For The Fries
Step 1
Oven to 220C, cut potatoes skin-on into chips, drazzle baking tray with vegetable oil, shake chips with salt & pepper. Cook for 20 minutes.
For The Chilli
Step 2
Sliced shallot, cumin and beef mince, fry for 2 mins. Add beef stock, chipotle, tomato paste, pinch sugar & 150ml water. Cook for 8 mins. Add soy sauce.
For The Slaw
Step 3
Grate carrot, shred lettuce, combine mayo, 15ml lime, salt & pepper, 1tbsp water.
To Serve
Step 4
Grate cheese, split fries into two piles, top with chilli, cover in cheese and return to oven for 5 mins until cheese melts. Serve with slaw on the side.
Full Instructions
Step 5
Preheat the oven to 220°C/ 200°C (fan)/ gas 7 and boil half a kettle
Step 6
Cut the potatoes (skins on) into thin chips, then add them to a large baking tray (or two!) with a drizzle of vegetable oil and a generous pinch of salt and give everything a good mix up
Step 7
Put the tray[s] in the oven for 20-25 min or until the chips are golden and starting to crisp
Step 8
While the chips are cooking, peel, and slice the shallot[s]
Step 9
Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium heat
Step 10
Once hot, add the sliced shallot and ground cumin and cook for 1-2 min
Step 11
Add the beef mince to the pan and cook for 3-4 min further, breaking it up with a wooden spoon as you go
Step 12
Meanwhile, dissolve the beef stock mix in 150ml [250ml] boiled water, then add the tomato paste, chipotle paste (can't handle the heat? Go easy!) and a pinch of sugar and mix to combine – this is your spicy stock
Step 13
Add the spicy stock to the beef mince
Step 14
Reduce the heat to medium-low and cook for 6-8 min or until the sauce has thickened and the beef is cooked through
Step 15
Once done, remove the pan from the heat and set aside for later – this is your beef chilli
Step 16
While the chilli is cooking, combine the mayo with the zest and juice of 1/2 [1] lime, 1 tbsp [2 tbsp] water and a generous pinch of salt and pepper in a small bowl – this is your zesty slaw dressing

Grate the cheddar cheese

Once the chips are done, push them into 2 [4] piles on the baking tray[s]
Step 19
Top each pile with the beef chilli and then the grated cheddar cheese and return the tray[s] to the oven for 5 min or until the cheese has melted
Step 20
Once done, set aside for a few minutes to cool slightly – these are your loaded beef chilli cheese fries
Step 21
Top, tail, peel and grate the carrot[s]

Wash the gem lettuce, then pat it dry with kitchen paper and shred finely

Combine the grated carrot, shredded lettuce and the zesty slaw dressing in a bowl then give everything a good mix up – this is your zesty slaw

Cut the remaining lime into wedges

Serve the loaded beef chilli cheese fries with the zesty slaw to the side

Garnish with a lime wedge
