Instructions

Step 1
* Pre heat Pit Boss smoker to 225 F.

* Season the pork belly on both sides and place fat side up on grill grates.
Step 3
* Smoke until 200-204 F internal (6-8 hours) and double wrap in butcher paper and a towel. Place in a cooler and let rest for 30 minutes up to 1 hr.
Step 4
* Top with Chili oil.
