For the rub
1 ½ cupturbinado sugar
⅓ cuppaprika
¼ cupchili powder
½ cupkosher salt
1 tspblack pepper
1 tspground cumin
2 tspground mustard
2 tspcayenne pepper
2 Tbspgranulated garlic
1 Tbsponion powder

Instructions
Step 1
Mix seasonings together for the dry rub. Pull membrane of ribs.
Step 2
Apply rub on each side, place in smoker at 250 fahrenheit for 2 hours.
Step 3
Remove from smoker. Place on foil over a layer of brown sugar and dry rub mix.
Step 4
Flip over, do the same layer of brown sugar followed by dry rub in the inside of the rib curve.
Step 5
Add honey.
Step 6
Create an envelope using foil, ensuring to fold back any length-wise foil that would overlap
Step 7
Pour apple juice into envelope, quickly close up sides
Step 8
Put back into smoker at 250 degrees for another 2 hours
Step 9
Check to see that the meat pulls away from the bone easily, if so it's ready. Sprinkle with more rub. Add sauce for muddy style.
