Instructions

Step 1
For the drawing batter, whisk egg white with sugar until firm peaks. Add softened butter and whisk again. Then add flour and whisk. Add food colouring and mix well. Transfer the mixture to the piping bag.

On a parchment draw the hearts. ( I printed the sample and placed it under the parchment paper. You don’t need to draw it all over the parchment. Only on the half of it). Place in the freezer until you prepare the cake batter.

For the cake batter, preheat the oven to 180C. Separate egg yolks from the egg white. In a large bowl whip the egg whites until frothy and little by little start adding the sugar and beat until stiff peaks. Then add the egg yolks one at a time, without ceasing to beat. Add sifted flour and fold until incorporated.

Take out the parchment with the drawing from the freezer and put it onto a baking tray. Transfer the batter to the baking tray(30cm*35cm) and spread it into an even layer. Bake for 15 minutes or until the top is springy and the edges are slightly brown.

Take out from the oven and remove the parchment. Transfer to the wet clean kitchen towel(hearts side down) and roll, starting from the side without the drawing. Let it cool.

Meanwhile, prepare the filling, In a large bowl whisk together the double cream, icing sugar and cream cheese and vanilla powder until firm.

Unroll the cake and spread the filling on top of it. Line strawberries on the nearer side (without drawing) and roll the cake up gently but firmly.

Cover with the cling film and let it set in the fridge for 2-4 hours before serving.
