Instructions

Step 1
Preheat the oven to 90C

Whisk egg white with a pinch of salt, then start to add sugar slowly, (a bit at a time) and whisk until the meringue forms stiff peaks and looks glossy.

Add cornstarch and food colouring, and whisk until combined.
Step 4
Transfer to a piping bag fitted with a large ā€œopen starā€ tip.
Step 5
On an A4 paper draw hearts, using a pen. ( just to mark the shape of our meringue sandwich.
Step 6
Place the paper on a baking tray and cover it with the silicone mat (or parchment paper).

Assemble merengue in a heart shape. Make a meringue kiss if desired.
Step 8
Bake for 2-2.5 hours at 90C, then switch off the heat and let them cool completely inside the oven.

For the cream, in the large bowl combine icing sugar, cold double cream, and cream cheese. Beat for a few minutes until firm.

To assemble, place one meringue upside down, add cream, and then add raspberries on the sides.

Cover with the second merengue and enjoy!
