Instructions

Step 1
Bring a large pot of water to a boil with two teaspoons of salt.
Step 2
Add the spinach and cook just until wilted, about 1 minute.
Step 3
Drain the spinach in a strainer or colander.
Step 4
Rinse with cold water until cool and squeeze the water out of each fistful of spinach.
Step 5
Chop the spinach bundles into a 3/4 inch width.
Step 6
In a large skillet melt the spread (butter) and sauté the onions (SEE RECIPE IN MENU) THEN add the garlic and cook for another 5 min.
Step 7
Add in the remaining kosher salt, black pepper and nutmeg.
Step 8
Add in the flour and mix with a wooden spoon over low and cook for 2-3 minutes until the aroma is a bit nutty. Creating a thick paste for your Roux base.
Step 9
Add the almond milk and cook until boiling.
Step 10
Add in the cream cheese or whatever WHITE vegan cheese you may have.
Step 11
Cook for 6-8 minutes or until the mixture has thickened.
Step 12
Add in the spinach and the (Vegan) Parmesan cheese and stir to combine. ENJOY! AHAVA!
