Instructions

Step 1
Wash and drain toor daal 3 to 4 times. Add 2 cups water. Add 1/2 teaspoon turmeric, 1/4 teaspoon hing, 1 teaspoon chili powder and 1 teaspoon fenugreek seeds.
Step 2
Pressure cook the daal for about 15 minutes ( 3 whistles) or in the instant pot ( pot in pot method) for 10 minutes.
Step 3
Soak about a lime size tamarind in 1 1/2 cups of warm water for about 10 minutes. After 10 minutes squeeze the tamarind to extract the juice. Strain it and discard the seeds and pulp.
Step 4
Heat oil. Add mustard seeds. After they splatter, lower the heat.Quickly add curry leaves, remaining turmeric and hing. Add goda masala and give it a quick stir.
Step 5
Add the tamarind water and let it come to a boil.
Step 6
Add the cooked toor dal and stir.
Step 7
Add jaggery and salt and let it boil for about 5 minutes.
Step 8
Garnish with chopped cilantro and a teaspoon of ghee.
