Instructions
Step 1
To make this vegetarian, add 2 cans of black beans, drained instead of the ground beef.

Brown the ground beef and drain when all pink is gone.
Skillet
Step 4
Add minced garlic and diced onions, zucchini and tomatoes to the ground beef. Cook on medium heat until onions are tender.

While the mixture is cooking, spray a baking dish with cooking spray.

Halve the peppers and clean out the seeds and the white membranes. Add them to the baking dish.
Step 7
Add cream cheese to the filling mixture in the skillet. Stir until cheese is melted and evenly combined.
Step 8
Spoon mixture into peppers. Make sure all the little spaces in the peppers are filled but don’t heap the mixture on top. Should be even with the top of the peppers.
Step 9
Add 2 ish tbsp of shredded cheese to the top of each pepper.
Step 10
Cover with foil and cook for 30 minutes
Step 11
Uncover and cook for an additional 5 mins on the top rack.
Step 12
Let stand for 5-10 minutes before serving.
Step 13
Sides that would go with this would be garlic bread, and beans and rice if they aren’t in the filling already.
