Instructions
Step 1
In a large mixing bowl, blend the sugar, butter, egg, and vanilla extract until smooth, then stir in the milk. In a smaller mixing bowl, blend the flour, baking powder, and salt.
Step 2
Add the flour mixture to the wet ingredients a little bit at a time, stirring to incorporate. Fold in the raspberries.
Step 3
Pour the batter (it will be pretty thick) into a lined or well-greased 10” Dutch oven. Place the Dutch oven on a bed of 5 coals, and add 18 to the top of the lid (you’re aiming for 180°C-190°C). Baked for about 30 minutes, until the center is cooked through.
Step 4
Remove from the heat and let cool before lifting the cake out of the oven. Serve with additional berries and a dollop of whipped cream.
