Instructions

Cake Instructions

Step 1
Add 15-20 dates (Khadrawy or Medjool) into a small pot of boiling water and add 1/2 teaspoon of baking soda. Mix & allow to cool before blending.
Step 2
In a mixing bowl, mix 1 cup of brown sugar and 1/2 a stick of butter until fully combined.
Step 3
Add 2 eggs one at a time.
Step 4
Add blended dates to the bowl and mix it all together.
Step 5
Add a teaspoon of vanilla extract
Step 6
Add 2 cups of all purpose flour and teaspoon of baking powder.
Step 7
Add a pinch of salt, 1/2 a teaspoon of ginger powder & 1/2 a teaspoon of cinnamon powder.
Step 8
Mix everything until batter is a smooth consistency.
Step 9
Pour batter to a cake pan ( I used an 8 inch round pan)
Step 10
Bake at 350 for 35-40 minutes. Poke a toothpick and make sure that the batter isn’t still wet.

Caramel Sauce

Step 11
Add 1 cup of sugar to a pan on medium high heat
Step 12
Continuously stir to prevent burning.
Step 13
When sugar is completely melted, lower heat & add 1/3 stick of butter. Stir until butter is melted.
Step 14
Add 1/4 cup of room temperature heavy whipping cream & continue stirring for a few minutes than turn off heat.
Step 15
Caramel will thicken as it sits.
Step 16
When cake cools down, pour caramel on top. (Optional: add crushed candied walnuts or pistachios on top.)
