Step 1
Add peanut butter, pumpkin purée, vanilla extract, pumpkin spice, salt, and rolled oats to a medium sized mixing box and stir until well combined.
Step 2
Next add in your choice of add in. I used white chocolate chips, but dark chocolate chips, pecans, etc.. can be used.
Step 3
Once everything is well combined use a cookie scoop or a table spoon to scoop up just enough dough for a ball. Use your hands and roll the dough in a circular motion in order to create a ball.
Step 4
Note: if you like things a bit on the sweeter side I would recommend using 1 1/2 cup rolled oats instead of 1 cup, 1/2 cup pumpkin purée instead of 1/4 cup and also adding 1/2 maple syrup in order to sweeten the dough.
