Instructions
Step 1
Crumble yeast, add water and salt and stir until yeast is dissolved.
Step 2
Sift flour, measure, sift again; add to yeast and mix thoroughly.
Step 3
Work in soft butter with hands.
Step 4
Knead gently until smooth and elastic.
Step 5
Place in buttered bowl,cover with damp cloth and allow to rise in a warm place until double in bulk-about 2 hours.
Step 6
Punch down, turn over, and allow to rise again until double in bulk -about 1 hour.
Step 7
Shape into 15 balls and allow to stand 15 minutes on lightly floured board and cover with a damp cloth.
Step 8
Mold into oval shaped rolls; place fold side down about 2½ inches apart on unoiled baking sheet sprinkled with cornmeal.
Step 9
Allow to rise uncovered ½ hour, brush with cold water and allow to rise ½ hour longer.
Step 10
Bake in steam-filled oven at 425* for 30 to 35 minutes.
Step 11
Brush with cold water after first 15 minutes, and again 2 minutes before removing from oven.
Step 12
Serve hot or allow to cool quickly.
