Homemade Chicken Soup (Dolores's Recipe)

Instructions

Step 1
Fill a large pot with the water
Step 2
Add chicken thighs and 1 onion to the pot. Set the other onion aside for now.
Step 3
Bring to a boil and then simmer for 1 hour, skimming off any foamy fat from the surface of the water when it starts to boil.
Step 4
After 1 hour, remove the 4 chicken thighs and the onion and set aside.
Step 5
Stain the liquid through a sieve or a fine strainer into another pot or bowl.
Step 6
Rinse out the original pot and pour the reserved liquid back into this pot after you have strained it

Remove the skin and bone from the chicken thighs and break up the meat into bite sized pieces.
Step 8
Add to the pot the chicken meat, the 2nd onion, carrots and the parsnips

Bring to a boil again and simmer for 45 minutes to a hour, until the carrots and parsnips are tender
Step 10
Add the Chick Soup Base Powder to the pot 1/4 cup at a time, more if required for a salty flavor, then simmer for another 15 minutes to 1/2 hour more. Add any extra soup base a little at a time, (YOU DON'T WANT IT TOO SALTY.)

To Serve:

Boil the Rotini noodles, rinse off the starch in cold water. Set aside. Add some noodles to each bowl before you add the soup. Enjoy.

Recipe can be cut in half if you want a smaller portion.
