Ingredients

1cauliflower
medium, cut in bite size pieces

1 Tbsvegan butter
unsalted

0.5yellow onion
diced

2cloves of garlic
minced
Sauce

1 cupraw cashews
unsalted

4cloves of garlic

1 tspherb de provence

¼ tspmustard powder

crushed red pepper
to taste

¼ cupnutritional yeast

1 cupwater

1 table spooncorn starch
corn starch slurry

3 Tbswater
Breadcrumb Topping
Instructions
Step 1
Cut cauliflower into bite size pieces and add to boiling water to blanch for 3 to 5 minutes.

Step 2
Put butter in a heated pan, add onion and garlic, and cook until soft.

Step 3
While onions are cooking, began making the sauce. Add ingredients through the water at a blender. Blend on high until smooth. Stir in the onions and garlic, then fold in the slurry.

Step 4
Place the cauliflower in a buttered casserole dish, and pour mixture over the cauliflower.

Step 5
Mix the breadcrumbs, vegan Parmesan and the Suffrito together, then sprinkle over the top of the casserole.
Step 6
Place in an oven that has been preheated to 375 degrees for 20 to 30 minutes.

Step 7
Finish by broiling on high for 2 to 4 minutes or until top is browned.
