Instructions
Step 1
Heat a frying pan over a medium-high heat and add the olive oil, season the zucchini and fry for 3-4 minutes on each side or until golden brown, then set aside.
Step 2
Add the onion and turn down the heat to medium, sauté for 15 minutes until wilted, then add the sliced garlic, stir it all for 1 minute then remove from the pan and set it aside.
Step 3
In a separate small bowl, mix the tomato purée, vinegar, lime juice, chili flakes and sugar and pour it onto the frying pan, then return the zucchini pieces to the pan.
Step 4
Cook for 4 to 5 minutes, season, sprinkle over the chopped mint leaves, add a few more dried chili flakes and a drizzle of olive oil.
Step 5
Serve it hot.
