Instructions
Step 1
In a bowl, mix tapioca starch, water, and sugar until fully combined.
Step 2
Microwave mixture for 60 seconds in 15 second intervals, mixing in-between intervals.
Step 3
Let mixture cool for 2-3 minutes.
Step 4
Gradually incorporate tapioca starch 1/4 cup at a time until a dough forms.
Step 5
Divide dough into 7 equal portions and dye them white, red, orange, yellow, green, blue, and purple.
Step 6
Roll the dough into small balls and lightly coat them in more tapioca starch.
Step 7
Cook boba in a pot of boiling water on medium high heat for 20 minutes.
Step 8
Remove the pot from heat and cover the pot with a lid for 20 minutes.
Step 9
Strain the boba and rinse them in cold water to remove excess starch.
Step 10
Transfer boba to a bowl and coat in a sweetener (ie honey or sugar syrup)
