Nori Butter
Instructions
Step 1
In a bowl add the miso paste, sugar, mirin, and vinegar. Mix until well combined.
Step 2
Cut the cod fillets to a size where they are similar in weight. This helps with even cooking. Place the cod in the marinade, and leave in the refrigerator overnight.
Step 3
Tear nori sheets and put it in a food processor, along with the hondashi. Blend until the nori is cut into smaller pieces. Add the room temperature butter and blend again until it is thoroughly combined. Place the butter onto plastic wrap. Using the wrap, shape the butter into a log. Place in the refrigerator to set for at least an hour. Can be done the day before.
Step 4
Before cooking the cod, take it out of the refrigerator and let it sit out at room temperature for an hour. Cook the cod in an air fryer or broiler for 5 minutes. There should be some char on the fish.
Step 5
Plate the fish and serve with a slice of the nori butter. Enjoy warm.
